About Big Tofu

Hi, I’m Bethany, also know as Big Tofu.  I’m a CrossFit athlete, body weight specialist for the United Grid League, CFL2 coach, and college nutrition student. I’ve been vegan for four years, vegetarian for nine, and I also have celiac disease– so in addition to all my recipes being free of animal products, nothing on my page contains gluten!

I grew up as a competitive gymnast, but it wasn’t until I started CrossFit that I started to take my nutrition seriously. I had just transitioned to veganism which is often criticized for being a low protein diet, and so I knew that if I wanted to be successful I would have to pay just as much attention to my food as I do to my training. Four years later, I’ve added nearly 30 pounds to my once tiny gymnast body and more than doubled all my lifts! It’s taken time and effort, but with a bit of planning I believe it is totally possible to gain strength as a vegan.

And as for my food? I’ve never been a boring “chicken, broccoli, and rice” girl. Aside from my love for plain tofu, I prefer to get creative– think cauliflower frittatas, matcha protein muffins, and single-serve lasagna. My goal with this page is to show you that 1) gaining muscle as a vegan is possible and 2) you don’t have to eat boring foods to meet your goals!
