Chocolate Covered Peanut Butter Pudding

Did you know you can use tofu for dessert recipes, too? This chocolate covered peanut butter pudding only uses 5 ingredients, one of which is silken tofu! By itself, tofu has very little flavor. This means it easily takes on the flavors of whatever it's prepared with which, in this case, is peanut butter. And when paired with a light chocolate shell, it makes a tasty treat!

For the pudding:
-14 oz silken tofu
-1/3 cup + 2 tbsp peanut butter
-1/4 cup maple syrup
For the topping:
-1/2 cup chocolate chips
1.5 tsp coconut oil
Method:
-to make the pudding, blend all ingredients in a food processor until smooth
-divide pudding between 4 small dishes
-to make the topping, microwave together chocolate chips and cocnut oil until melted, stirring every 45 seconds
-pour chocolate over each dish of pudding and spread into a thin layer (be sure not to add too much or the shell won't crack!)
-refrigerate until chocolate has hardened; about 1 hour
-enjoy!
