Double Chocolate Energy Bites

These double chocolate energy bites are for all the chocolate lovers out there...prep these over the weekend so you have bite sized treats to snack on all week!

Ingredients:
-15 dates
-3/4 cup peanut butter
-1/2 cup oats
-3 tbsp cocoa powder
-2 tbsp maple syrup
-84g plain unsweetened pea protein powder
-1/2 cup almond milk (more as needed)
Topping:
-1 cup chocolate chips
-1 tbsp coconut oil
Method:
-blend all ingredients in a food processor to form a crumbly dough (add more almond milk as necessary
-roll dough into balls
-microwave chocolate chips and coconut oil until smooth, stirring every 30 seconds
-coat each bite in chocolate before placing on parchment lined baking tray
-refrigerte until chocolate has cooled; about 1 hour
-enjoy!
