Easy Sweet Potatoes and Beets

Sweet potato and beets are two of the best fall flavors… and they both pair really well with goat cheese and balsamic! I’ve been making this quick little veggie bowl since before I went vegan, and I’m so glad vegan cashew cheese exists so I can continue eating it without the animal products. Give it a try!

Ingredients:
-1 sweet potato
-1 beet
-2 oz vegan goat cheese
-drizzle of balsamic glaze
Method:
-preheat oven to 450F
-wash veggies and use a fork to poke holes in them before wrapping with foil
-place veggies on baking tray and bake until soft (45-60 mins)
-remove veggies from oven, let cool slightly, then peel and chop
-add veggies to a bowl, then top with goat cheese and balsamic
-enjoy!
